Our Anago Bento features premium Japanese anago weighing approximately 200 to 250 grams. Each eel is sourced directly from Japan and prepared using traditional techniques that have been refined for generations. The anago is carefully filleted and slowly simmered in a balanced broth made with sweet soy sauce, mirin, and fragrant aromatics. This gentle cooking process allows the flavors to develop fully while creating an exceptionally soft and melt in your mouth texture.

To elevate the richness even further, we create our signature eel sauce entirely from scratch. The head and bones are simmered for days to draw out every layer of umami, resulting in a deep, glossy sauce that complements the anago without overpowering it.
